| Chestnuts 80g, Beef broth 250g, Celery 20g, Butter 15g, Onion 10g, Salt, Black Pepper |

1. Thinly slice the peeled onion and celery and stir-fry with butter in a pot. 2. Add thinly sliced chestnuts and beef broth. Cook over slow fire with the lid closed. 3. When the chestnuts and vegetables are fully cooked, finely grind in a mixer and filter through a sieve. 4. Boil once again with cream and butter, and season with salt and black pepper. Throw in a few croutons as a final touch. |
