Chestnut Mousse

 

Sugar 20g, Milk 50g, Chocolate 17g, Almonds 6g, Chestnuts 50g, Cream 50g, Vanilla essence, Salt, Black pepper, Butter, Cognac, Powdered Sugar
1. Whip the cream. Boil the chestnuts in water for 30 minutes and peel.
2. Put the chestnuts in a saucepan and boil for 20 minutes with milk, water, salt, sugar, and vanilla essence. Take out the chestnuts and bring 60ml of milk to a full boil.
3. Mash the chestnuts and mix thoroughly with butter, chocolate, cognac, and
hard-boiled milk. Let it cool.
4. Design the plate by squeezing a bit of topping/cream.
5. Sprinkle over with powdered sugar and decorate with whipping cream and almonds.
