Fatsia belongs to the araliaceous tree family. With a lot of thorns on the branches, it blooms its flowers in August. The soft shoots that sprout in the spring are edible. There are 40 different kinds of fatsia in the world, growing in North America, Asia, and the Malay Peninsula. There are 4 kinds growing in Korea, and all are edible.
One hundred grams of Fatsia shoots consists of carbohydrates (5.9 g), protein (5.6 g), iron (5.3 g), fat, phosphorous, lime, and calcium. The shoots have 6 times more vitamin A than bean sprouts; twice more than cucumber and sweet potato.

Fatsia grows wild in mountains and fields. It is usually 6 m tall and its branches and leaves have thorns. The shoots are flat, round, and purple in color. It consists of protein, lime, vitamin C, sugar, fiber, fat, phosphorous, calcium, and iron. It is good for diabetes, stomach disease, and arteriosclerosis. The skin of fatsia shoot is used as a medicinal herb.
