Oak-mushroom chicken soup
Unlike western soups, oak-mushroom chicken soup does not need loo. It is watery, not thick like a stew.
Chicken breast 100g, fresh oak-mushrooms 10g, Chinese cabbage 20g, salt, pepper, sesame seed oil, soy sauce, clear refined rice wine.
1. Slice the chicken breast.
2. Cut the oak-mushrooms and the Chinese cabbage side ways.
3. Pour meat stock into a pan.
4. Combine ingredients 1 and 2 and boil while seasoning with salt.
5. Finish by adding pepper and sesame seed oil.
