The collected oak-mushrooms have a very pleasant fragrance and are generally sold dry to prevent rotting. As to dehydrating methods, one can use sunlight or thermal power.
The method using sunlight is mostly used in small-scale cultivation, and generally thermal power is used. Mushrooms that are dried by thermal power are clean, shiny, have straight gills, and are clear in color. This method allows production of high quality mushrooms. The thermal power method can be further classified into the direct heating with natural ventilating method and the indirect heating with ventilating method. It is more convenient to use the indirect heating method for large-scale cultivation. |

Other storing methods concern proper consumption. These methods are salting, freezing, dehydrating, and canning.
In salting, the mushrooms are boiled in water and cooled. Then, in a container, layers of mushrooms and salt are placed alternately. The water from the boiled mushrooms is added, and the container is sealed tightly.
In the freezing method, the mushrooms are slightly boiled and cooled. Then they are put into a plastic bag with distilled water and placed in a freezer. The most widely used method is the drying method where the volva of the mushrooms are removed and dried under the sun. If the moisture contained in the mushroom is below 15%, it can be stored in a plastic bag with a desiccating agent.
Lastly, for the hard boiled method, the cleaned mushrooms are put into a bottle with water and then steamed in a pressure cooker for 30 minutes. When the pressure is out, the the bottle is capped and cooled.
Selecting the proper mushrooms is a very important factor when storing them using these various methods. |
