Pine-Mushroom and Beef Kebabs
This simple dish allows one to enjoy the fresh fragrance of pine-mushrooms. In choosing mushrooms, avoid ones that are split at the top.
Salt 3g, Pine needles 2g, Pine-mushrooms 50g, Sesame seed oil 3g, Pine nuts 5g
For the beef sauce : Soy sauce 15g, Spring onion 10g, Garlic 5g, Sugar 10g, Black pepper 2g, Sesame seed oil 20g, Powdered sesame seeds mixed with salt 5g
1. Wash sand off from stems of mushrooms. Peel the skin off in salt water. Slice them
vertically into 0.6-0.7cm thick slices. Add salt and sesame seed oil, mixing gently with
hands.
2. Get a flat piece of beef and cut it into 1x6cm strips. Put all the ingredients of the sauce
into a bowl and mix well with a spoon. Add the strips of meat into the bowl and mix well
once again.
3. Alternate beef and mushroom one after the other onto a metal skewer. Cook the kebabs
slightly over high heat. When cooked, sprinkle crushed pine nuts over the kebabs. It
can also be eaten with soy sauce or mustard.
