Pine-mushrooms are divided into two categories, summer and autumn pine-mushrooms, depending on when they are collected. The summer pine-mushrooms are collected during the rainy season in the summer, when the temperature is low, but the quality is not so good. The autumn pine-mushroom is better in quality than that of summer and is higher priced.

and autumn pine-mushrooms. Summer pine-mushrooms grow between May and July, and can be gathered during the rainy season when it is not too hot.

Autumn pine-mushrooms are collected from around September 8 (give or take 3 days) till late October. Sometimes, they can be produced even until mid November.

Pine-mushrooms do not grow again on the exact original spot; they grow a little bit detached from their original spot. This makes them extremely hard to find, only by experts with careful attention.

There are various methods to maintain the freshness of pine-mushrooms. For long-term storing, the Instant Freezing Method (patented by Yi-han Lee of Yang-gu country; Application No. 91-4486) is often used. In order to keep pine-mushrooms fresh for 2-3 days, clean mushrooms with a smooth brush, wrap them in a newspaper, spray them with water, and store them in a refrigerator. For medicinal use, mushrooms are mostly dried. Freshly-collected pine-mushrooms have the best taste and aroma.
